What is Saganaki?
The name “saganaki” covers a variety of dishes prepared in a small frying pan, the best-known being an appetizer of fried cheese. Named for the two-handled frying pan in which it is prepared – a sagani – this dish is a tasty treat. There are many types of cheeses used in a saganaki dish, including graviera, kefalograviera, halloumi, kasseri, kefalotyri, or sheep’s milk feta cheese.
To prepare, first the cheese is melted in the frying pan until it is bubbling. This dish is typically served with lemon juice and pepper and is often eaten with bread. A variation of this dish is the “flaming saganaki,” which originated in America in 1968 at The Parthenon restaurant in Chicago’s Greektown. After being fried, the saganaki cheese is flambéed at the table, and the flames are then usually extinguished with a squeeze of fresh lemon juice.
